guacamole

Here is a recipe we have been enjoying a LOT lately. Originally, I found this on the internet listed as "The world-famous Guacamole Recipe", but I have tweaked it enough to our own tastes that it is now just my guacamole recipe. Nothing too fabulous or earth shattering, just really good guac.


2 ripe avacados (dark green, slightly soft)
3 to 5 garlic cloves, depending on size and your affinity for garlic
1 Tb. lemon juice
1/4 cup onion, finely chopped
1 small tomato (or about half of a larger one), finely chopped
1/8 tsp. chili powder
1/4 tsp. salt
1/4 tsp. pepper

Slice the avacadoes in half and remove pits. Remove skin by peeling it off or scrape avacado flesh out with a spoon. In a medium bowl, mash avacado until fairly smooth (I use my handheld potato masher with great success). Crush or press the garlic into the bowl, and stir in the lemon juice, onion, tomato, and spices.

It's great right away, but if you cover and refrigerate for an hour or so the garlic will really blend with the other flavors well. Eat it within the first day, it really doesn't keep well at all. But this should not be a problem- Jason and I can eat the whole thing in one sitting, especially with our favorite organic blue corn chips on hand. Enjoy!!
