autumn soup

As requested: one of our favorite recipes. An all-inclusive meal, just serve some nice whole-grain bread with it. My favorite thing to send to new moms in the days after baby comes. It's just so GOOD! Doubles in a tall stock pot and freezes well- just thaw and reheat.


Autumn Soup

1 lb. ground turkey
1 clove garlic, chopped
1 onion, chopped
4 c. water
2 c. carrots, peeled and chopped
2 c. celery, chopped
2 c. potatoes, peeled and diced
1/2 c. instant rice (I use brown but white is fine)
1 tsp salt
1/2 tsp black pepper
1 tsp instant chicken bouillon
1 bay leaf
1/2 tsp basil leaves
1/2 tsp dried parsley flakes
15 oz. can tomato sauce

Place gound turkey, garlic and onions in a large soup pot, and brown. When done, pour the meat mixture into a colander and spray with hot water to rinse off excess fat. Return the meat to the pot, and add the remaining ingredients EXCEPT the tomato sauce. Bring to a boil, cover, and simmer for 20 minutes. Add tomato sauce, cover, and simmer 10 minutes longer. Remove bay leaf and serve.

  1. I'll have to try this. You cook so well, I can only bow to the goddess of the kitchen and chant, "I'm not worthy." But let me know if you need me to make something anyhow.
