belgian waffles

By request, here is my waffle recipe. This is for the thick Belgian style waffles- not sure how it would work in a thin waffle maker. It's a bit on the complicated side, but turns out FABULOUS when you do it right. :)


Belgian Waffles

1 3/4 cup flour
2 tsp. baking powder
1/2 tsp. salt
1 Tbl. sugar
3 eggs
7 Tbl. vegetable oil
1 1/2 cups milk

Preheat waffle iron. Sift dry ingredients together in a medium bowl. Separate the eggs, and beat the egg whites until they are stiff (I just stick them in the KitchenAid with the wire whisk and turn it on while I do the other stuff.) Combine egg yolks, oil, and milk in another bowl, and mix. Add this to the dry ingredients and beat until there are no lumps in the batter. Gently fold egg whites into the batter using a spatula. Allow batter to sit for several minutes to rest before baking. Put a full 1/2 cup of batter in your waffle iron to make a 9-inch round waffle. Makes about 8 waffles.
